Department of Food Science
Gerald Rimbach is a nutritionist and university lecturer at Kiel University. Since 2003, he has held the Chair of Food Science at the Institute of Human Nutrition and Food Science at the Faculty of Agricultural and Nutritional Sciences.
His research focusses on the biofunctionality of food ingredients, in particular their role in cellular stress, health and ageing, also depending on the ApoE genotype. He investigates the mechanisms of action of phytochemicals, vitamins and antioxidants using cellular and molecular biological methods. A particular focus is on the anti-inflammatory effect of bioactive compounds, which he investigates in vitro and in vivo. Using model organisms such as Drosophila melanogaster and mouse models, he also addresses questions of experimental ageing research in the context of nutrition and health.
